Meet Kyle Hollenbeck of Aioli Gourmet Burgers and Catering in North Central

Today we’d like to introduce you to Kyle Hollenbeck.

Kyle, please share your story with us.
Aioli Gourmet Burgers was created by three lifelong friends. Michael, Chef Tom, and I. I had a heavy sales background, Michael was a finance major and Chef Tom was a Culinary Institute of American Grad. We started with one food truck and have grown to three trucks and now our restaurant on 32nd St and Shea.

Chef Tom, another partner Ryan, and I started Modern Tortilla, a gourmet taco truck. We now have two of those and a taco cart. I have another partnership with Chef Adam Allison on Handlebar Diner out in Eastmark Mesa. I also am partnered with him and Keri Frazier for Left Coast Burrito.

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
The food truck business is far from a smooth road. You are a kitchen on wheels, so you not only have the cooking equipment to upkeep but the engine, transmission, tires and everything else a truck needs. We have run into every obstacle you can imagine. You also have to prepare for Summer. The food truck business dies as so much does in Arizona from June-September.

So let’s switch gears a bit and go into the Aioli Gourmet Burgers and Catering story. Tell us more about the business.
Aioli Gourmet Burgers and Catering has a food truck business where we focus on private events. We cater weddings, Birthday Parties, Corporate events and much more. The second part of our catering business is drop off catering and we offer much more than burgers. We have won the 2015 Scottsdale Culinary Festival Best Burger at the Burger Battle. We have won 2016 Devoured Peoples Choice and 2017 Phoenix new Times Best Burger. We just hit our year Mark for the restaurant and that was a huge accomplishment for us. Our burgers all have their own Signature Gourmet Aioli sauce and that sets us apart. We make the sauces from scratch.

Has luck played a meaningful role in your life and business?
Honestly there are days where we just have good luck on pulling 6 events off on a Saturday. I call it luck but sometimes its just our crew executing the impossible. For the most part we have had great luck.
