Today we’d like to introduce you to Elliette Dudley.
Hi Elliette, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
My first love was actually baking! I started a small baking business in middle school in
Coronado, CA selling banana bread and my signature “Everything Cookies” at Café Madrid. I
also baked blondies and peanut butter thumbprints for Crown City Inn, which were served to
guests at check-in. I grew up watching Barefoot Contessa and got my first KitchenAid mixer at
age 10 – I still use it today!
While I’ve always enjoyed baking and cooking, it wasn’t until 2018 that I truly fell in love with
cooking. A food blogger’s weekly dinner live streams and cookbooks sparked my obsession with
everything from kitchen tools to sourcing high-quality ingredients. Now when I travel, local
open-air markets and specialty kitchen shops are always on my list. Last September in Paris, I
brought back handcrafted wooden spoons, ceramic bowls, mustards and vinegars.
Before I became a chef, I earned a degree in Business Communications at ASU and worked in supply chain and logistics. When the pandemic hit, I was laid off – a blessing in disguise. I enrolled at Arizona Culinary Institute, thinking it might be a short course, but one week in I knew I’d found my path and switched to the full diploma program.
I knew going into culinary school that I didn’t necessarily want to work in a restaurant, but I
trusted I’d find my path as I progressed. Before graduation, I worked closely with our career
counselor to explore externship opportunities. I already knew I loved working closely with people
and I realized I wanted to create something that blended personal connection with my love for
cooking. That realization inspired me to start my business, Eat Ette by Chef Elliette Dudley,
which is a play on the spelling of my first name.
Becoming a personal chef turned out to be the perfect fit. It gave me the freedom to use the
culinary techniques I learned in school while developing a creative and flexible service model.
I’ve built a diverse menu collection and now offer fully customized meal plans tailored to each
client’s needs, from paleo and low-carb to dairy-free and diabetic-friendly. The collection is
always expanding as I discover new ingredients and draw inspiration from dishes I come across
in daily life, travel and client requests. The work is both detail-oriented and highly rewarding. I’ve
built strong relationships with my clients and truly feel like part of their families.
What started as a creative leap quickly turned into a thriving business and I couldn’t imagine
doing anything else.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Like most small business journeys, it hasn’t been completely smooth, but every challenge has taught me something valuable. In the beginning, finding clients was the hardest part. I didn’t have a marketing team behind me, so I leaned on social media, word of mouth and referrals to grow my business. Over time, those connections have become my strongest form of advertising.
Working for myself also means wearing every hat. There’s no one to fill in when I’m out of town, and I’ve had to adjust to life without the structure or benefits that come with a corporate job. But the freedom and creativity I’ve gained have made it more than worth it.
Another ongoing challenge is balancing flavor with dietary needs. Many of my clients have allergies or follow specific diets, which means certain ingredients are completely off-limits. I’ve learned to get creative. I enjoy finding new ways to build depth and texture without relying on the usual suspects. It’s pushed me to be a better chef and made my food more intentional.
Alright, so let’s switch gears a bit and talk business. What should we know?
My business, Eat Ette by Chef Elliette, is centered around creating customized dining experiences right in my clients’ homes. Most of my week is spent meal prepping for families with specific dietary needs, everything from paleo and dairy-free to diabetic-friendly. I focus on building meals that are as flavorful and comforting as they are nourishing, using ingredient swaps like low-glycemic grains, non-dairy creams and fresh herbs to keep things vibrant and balanced.
Beyond meal prep, I host private dinners, brunches, luncheons and small catering events throughout the year. I also teach private cooking lessons, which have become one of the most rewarding parts of my work. Each class is tailored to the person or group whether it’s a couple learning to make fresh pasta together or a student preparing for culinary school.
What sets Eat Ette apart is the level of personalization and care that goes into every experience. I take time to understand my clients’ needs, allergies and preferences, then build menus that feel like an extension of them. My clients trust me not just because the food tastes great, but because they know I listen, communicate clearly and truly care about their experience from start to finish.
Is there anything else you’d like to share with our readers?
People often assume that in-home meal prepping means fancy, high-end food. In reality, most of
my clients want meals that meet their dietary needs while being comforting and nostalgic. I often
get family recipes to “jazz up,” like broccoli cheddar casserole or braised cabbage, transforming
them into cleaner, allergy-friendly versions with a gourmet touch.
What might surprise readers is how much time and care goes into every meal. Each component
is homemade and recipe research and development are key parts of my process. Being a
mobile chef means adapting to a new kitchen every time with different stovetops, burner heat
outputs, ovens and overall kitchen layouts. I tailor the experience to each client’s unique
allergies, preferences and space. Every meal is a carefully curated, personalized experience.
Future goals:
My journey in the culinary world has exceeded all my expectations. I look forward to a lifetime of
learning, growth and connecting with mentors, especially since I didn’t follow the traditional
restaurant path. Learning from experienced chefs keeps me inspired and helps me be a better
mentor to those I teach. A lifelong dream of mine is to attend pastry school in France, simply for
the love of it, while continuing to explore new cultures and cuisines through travel.
