Exploring Life & Business with Brooke Knudson of d’Lite Healthy On The Go

Today we’d like to introduce you to Brooke Knudson.

Hi Brooke, thanks for sharing your story with us. To start, maybe you can tell our readers some of your backstory.
Brooke and Chad Knudson, husband and wife duo, launched d’Lite Healthy On The Go with one goal: create a quick-service restaurant that provides high-quality, nutritious eating in a convenient format, while creating a welcoming environment for guests to achieve healthier diets and lifestyle choices with ease.

The idea began around a dining table in 2007. Eating out at traditional restaurants left the them lethargic with stomach aches or worse. They identified that low quality products, hidden ingredients, imbalance of calories and chemically made products contributed to these negative impacts in the body. The quick-service restaurant sector also lacked concepts that offer healthy meals without sacrificing price or convenience. So, they decided to use their nutrition and business experience, determination and work ethic to provide a better option for consumers by forging a new path in the quick-service dining category.

Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
A start up is never easy. It presented daily challenges, risks, limited budgets and resources. In 2007, we were some of the first pioneers aiming to make the quick serve health industry accessible. Through the ups and downs, we utilized grit, determination and passion to bring healthy fast-food to the community; it was our mission that never wavered.
