Good morning Scott, we’re so happy to have you here with us and we’d love to explore your story and how you think about life and legacy and so much more. So let’s start with a question we often ask: What do the first 90 minutes of your day look like?
lets see getting into the restaurant means cleaning out the oven of ash and coals first. Once it is clean we can light it up with mesquite wood, so it can get hot for lunch. After that is mixing our sourdough for tomorrow and rolling all the pizza dough for the day. pretty peaceful and nice morning
Can you briefly introduce yourself and share what makes you or your brand unique?
Hello I’m Scott Girod the chef and owner of Anello. I have been cooking for over 15 years now and love cooking over a live fire. Anello is a small wood fired restaurant that specializes in natural sourdough and cooking fresh Arizona produce. Our menu is rather small but rotates frequently with what’s in season.
Appreciate your sharing that. Let’s talk about your life, growing up and some of topics and learnings around that. What’s a moment that really shaped how you see the world?
Our lives are always changing and there are many moments that build us up to who we are today. A big one was living abroad in Japan and seeing another way to live and what to live for. it taught me to slow down a bit and enjoy the seasons and what they bring food, festivals and traditions. also a lot of exposure and appreciation to new foods, tastes and textures
Was there ever a time you almost gave up?
There are so many moments where you want to throw up your hands and walk out. Especially in a restaurant the demands can be overwhelming at times. Even just getting the place open for business felt impossible at times. The lockdown during covid and trying to keep it going with no dine in. There are many moments but I always move past it as my family, friends and community support and urge me on.
Next, maybe we can discuss some of your foundational philosophies and views? What’s a cultural value you protect at all costs?
In my everyday life I try to live and treat all things with respect. which may sound easy but can be very difficult as we get weary and no longer want to care for things or other people. if we take the time to do it properly with respect others will notice and nature will be better cherished and preserved. We will also grow and see how much more peaceful our lives can be as we respect all things and in turn ourselves
Okay, we’ve made it essentially to the end. One last question before you go. When do you feel most at peace?
When I am at home with my family. Whether it be riding bikes around the neighborhood or walking up to the park with them and playing soccer. The normal days of being home and cooking for my boys and wife can get hectic but the time spent together is wonderful and exhausting
