Rising Stars: Meet Rachel Lee

Today we’d like to introduce you to Rachel Lee.

Hi Rachel, can you start by introducing yourself? We’d love to learn more about how you got to where you are today?
For years I wanted to start a business, but couldn’t quite figure out what it was I wanted to do. I love coffee and I love to travel, so a coffee food truck was a great way for me to have it all!

I’m sure you wouldn’t say it’s been obstacle-free, but so far would you say the journey has been a fairly smooth road?
I started the business in 2020, so of course, with it being a pandemic, the process was slow and very unclear. It turned into an 18-month journey before I was able to start serving, but that time gave me an opportunity to really figure out what I wanted my brand to become.

Can you tell our readers more about what you do and what you think sets you apart from others?
I started serving coffee in April of 2022, and am still finding my place in the food truck world. I am overwhelmed by the kindness of GrindTime Coffee and Casita Coffee who are also in the area and have been so supportive and answered all questions I’ve had. As I navigate this new venture, I am so proud of the business I’ve built that is all my own.
