Thanks for sharing your story with us Nashira. So, let’s start at the beginning, and we can move on from there.
My journey started many years ago on the island of Puerto Rico. I was so lucky to meet again with my high school best friend, to whom I married a year later and became the stepmom of his two beautiful boys. Although everything looked like a normal family, it never was. Soon after I started to raise my two kiddos something was not right or normal about their fiscal and social behavior development.
For the first time, we heard the word Autism to which we knew nothing about. They were both diagnosed with different conditions, and we felt helpless with no clue on what to do or where to start to help them. I really wanted to help, but in order to do that, I needed to understand or at least try to understand what was autism. Been the foodie that I’m my first instinct was going to one of the natural source that nourishes our bodies, food!
After much reading, and listening to other parents experiences about other kids with autism having digestion problems, like my kids, it was clear to me to start an elimination diet. And so it began our gluten-free lifestyle. One that benefited my husband who was also having celiac symptoms. By giving them natural remedies, special therapies and easy to digest foods we started to notice small changes that for us meant the world. And for nine years we’ve continued.
I’m grateful that for us all these changes in their diet worked. Now they are healthy kids and playing a great the part of been big brothers to my little one. In 2018, after a long time of baking at home, searching for the perfect bread, cake and cookie my husband encouraged me to start my own business. Been a stay home mom for so many years, I really wasn’t sure if I was going to able to make it.
All type of questions came up to the surface like, what if people don’t like it? What if I can’t speak the language correctly? Will I be able to be a mom and a new entrepreneur without failing? Well, that was the beginning of a long list of questions. Going back in time. In 2008, I graduated from BC in Technology Of Communications very generic, but I focus on photography and media. Been a creator was something that always called me.
Music, art, food art were things that attracted me the most. But I made the decision of staying at home been there for the kids while having the chance to explore in which direction to go whenever I had the opportunity. Baking runs in the family im sure like most families around the world. My mom was a home baker. She made beautiful cakes and delicious pastries for the family and friends.
Although she always had the dream of having her own business, it was hard to do it while raising four kids. But trust me when I say I was paying attention. On the other hand, my father had his own business which gave me a great example to follow. But it was the idea of baking that always resonance, it always brought the warm feelings of making something delicious with love for someone that you love.
In 2018, January 15th, I started Sunny Batters, a Gluten, Dairy, Soy, and peanut free baking business. I feel more passionate than when I started and determined to bake with love and dedication for those that need what I make. Safe for those with celiac and other common allergens or like me, for other moms who are looking to bring a smile on the face of their kiddos bringing food to the tables for everyone to enjoy.
That is the mission, and so far mission accomplished. As for now, I’m focusing in bringing traditional well known baked goods like cakes decorated with natural food colors, pastries, breads, and sourdough breads freshly baked. I see a bright future for Sunny Batters one that will give people a new experience.
We operate from a commercial kitchen located in Scottsdale Arizona, and we sell our gluten-free creations in Farmers markets, pickups from our location, and we offer a wholesale menu for local business in search for amazing gluten-free options. Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
I have to say that starting a new business it’s never that easy, but the struggles are the ones that had teached me the most. How to work around with what you have and make the best of it.
Not forgetting why did it start in the first place staying true to your vision. Home baking was tough now we’re in the next step, commercial kitchen more space more to make. 😆

Sunny Batters is a gluten-free business that operates from a gluten-free dedicated facility “Freedom Kitchen” in Scottsdale AZ. Our baked goods are free from most common allergens including gluten, dairy, soy, peanuts, and artificial food colors as well vegan and gluten-free pastry options.
We stand out for our variety of freshly baked gluten-free artisan breads from Baguettes, focaccia, rolls, and croissants. Customer can have our delicious baked good at uptown farmers market located in Phoenix AZ or by ordering online and pick up at our location in Scottsdale AZ. For local businesses, we have a wholesale menu.
What were you like growing up?
Growing up I was a busy bee. Always in sports or some source of art. I always laugh when I tell the story of my first dancing group as a kid, and I even made a contract that we all signed with our hands covered in paint and stamped on a paper 😂. Entrepreneurship in the early days 😆.
But there were very harsh days with big family situations that I think that’s why I was always looking for different ways to make things better. Divorce parents, family problems but I was always dreaming that someday I was going to able help a lot of people. Didn’t know how back then, but here I’m now.
It may not seem related but for me every time someone tells me I made their days or make them happy because it has been ten years without a chocolate croissant it clicks and make even more sense all the time that we dedicate. I say we because we are in this together as a family. Moms and Pops
