Today we’d like to introduce you to Eva Hofstedt.
Eva, can you briefly walk us through your story – how you started and how you got to where you are today.
I started The Stand as a tribute to my Grandmother who is a restaurant legend. She started with a little stand on the side of the road. My first restaurant is a reflection of her beginnings. Now that I’m on my second location, I’m sort of mirroring her journey. My concept is deeply rooted in my family traditions, except I’m imparting it with my own flavor and ideas.
Has it been a smooth road?
Absolutely, not! I have had just about every single scenario happen and some that I never dreamed could happen! Someone very wise once told me “smooth waters rarely produce skilled sailors.” The most important lesson I’ve learned about learning to be an entrepreneur is to NEVER stop. A common question folks ask me is how many hours do you work? I always say the same thing, however many hours it takes.

WE offer a very simple menu. We are specialists. I picked only a few items, took them apart and put them back together is simple yet fresh way. We butcher and grind our own beef every single day. The process to serve our fries takes two days. We make everything from scratch. We don’t have freezers except for the ice-cream. I’m most proud of the fact that I can offer my guest a good honest product with fair price and the smiles I see.
Is our city a good place to do what you do?
If I could recommend for someone starting out, yes this is great place! However, go into places where you’re not in a saturated market.
