Today we’d like to introduce you to Patrick Manmai.
Hi Patrick, please kick things off for us with an introduction to yourself and your story.
We run our small business “Thaitanic Kitchen”, it’s a cloud kitchen located in Tempe Food Court. Our journey with cooking started in 2015. We were a franchise of AFC Sushi Company.
We worked as a sushi chef in Safeway, Montana for 3 years, then we did a Thai Food Truck for 1 year also in Montana. In 2018 we moved to Mesa, Arizona to take over the Thai Restaurant and run this business for 3 years. We take a break from the cooking business for 1 year then we come back to cook again this year.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
There are some obstacles on the road where we run a business during the Covid-19 pandemic.
Anyway, we can pass it. The challenge is to learn/adjust how to present Thai traditional dishes to customers because many Thai dishes have a spicy taste, and many customers do not know much about the ingredients we use for cooking.
Appreciate you sharing that. What else should we know about what you do?
The name of our restaurant is “Thaitanic Kitchen”. We love the Titanic Movie and we found that Ti and Thai have the same pronunciation. We cook Thai Food dishes served to customers in Tempe and around here.
The best seller of our dish is Pad Thai which we cook with our homemade sauce recipe. And we also do Vegan optional for Pad Thai and other dishes. We do only carry out but customers are able to take a seat and have Thai food at Tempe Food Court, which’s very comfortable here.

Everyone has an opportunity to start something they would like to do. Opportunity is always waiting for you to reach out, you just have the intention and do the right thing that is beyond your abilities.
