Craft Cheesecake Parlor was born from the vision of C.W. Brock, a culinary school graduate who long dreamed of bringing his love for desserts to life. For years, that dream was set aside—but with the unwavering encouragement of his family, it finally took shape.
Blending C.W.’s passion for sous vide cheesecakes and his business acumen with Ashley’s creativity in social media and marketing, the couple turned a shared vision into something truly special. Their family quickly joined in to help—Aurora brings her flair for flavor development, constantly experimenting with new ideas; Cason applies his knack for numbers to manage costs and planning; and the youngest duo, Brykan and Ryder, serve as enthusiastic taste testers and the heart of the fun.
Together, they’ve built a brand that’s as heartfelt as it is delicious. Craft Cheesecake Parlor specializes in artisanal single-serve cheesecakes in mason jars, handcrafted in small batches with creativity and care. Each flavor tells a story—like The New Yorker, Cason’s Pot de Rêve, Sweet and Sour Kiss, and Sunset in Gilbert—blending culinary artistry with the family’s love for connection and community.
From local markets to neighborhood pop-ups, Craft Cheesecake Parlor has become more than just a dessert brand—it’s a family tradition, a labor of love, and a sweet reminder that it’s never too late to follow your passion when you have the right people cheering you on.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
It hasn’t been an easy start. Balancing a full-time career, family life, finances, and launching a new business has been both steady and demanding. There have been more late nights than not—testing recipes, preparing for events, and keeping up with the details that come with running a family business. But seeing everyone come together, working side by side at an event, and watching the pride on their faces makes every bit of it worthwhile.
We’ve been impressed with Craft Cheesecake Parlor, but for folks who might not be as familiar, what can you share with them about what you do and what sets you apart from others?
At Craft Cheesecake Parlor, we specialize in artisanal single-serve cheesecakes, each one individually cooked using the sous vide method to achieve an exceptionally smooth, creamy texture. Every flavor we create is completely original—developed, tested, and perfected by our family. From classic favorites like The New Yorker to inventive creations such as Sunflower Bliss and Thyme For Figs, each cheesecake is a reflection of our creativity, collaboration, and shared love for dessert.
We’re constantly innovating, introducing new flavors every month while bringing back past favorites that our customers have come to love. What truly sets us apart is that everything—from our recipes and flavor concepts to our logo, color palette, cost systems, and brand identity—has been built together as a family.
What I’m most proud of is that Craft Cheesecake Parlor isn’t just a business, it’s a family story. Every jar represents countless hours of teamwork, laughter, and late nights spent creating something meaningful. We want our customers to feel that connection in every bite, a taste of something crafted with care, love, and a personal touch that you won’t find anywhere else.
Where we are in life is often partly because of others. Who/what else deserves credit for how your story turned out?
There’s no question that I owe so much of this journey to the incredible support system around me. My wife Ashley has been my biggest champion for the past seven years, her love, encouragement, and belief in me have made all the difference. I truly wouldn’t be who I am today without her.
My children, Aurora and Cason, have also been a driving force behind Craft Cheesecake Parlor. They were the ones who really encouraged me to take the leap and follow my dream, and their excitement and pride keep me going through the long days and late nights.
And then there are our three-year-old twins, Brykan and Ryder, who bring a whole new kind of joy to the kitchen. There’s nothing better than hearing their little feet running in as they ask if they can “taste test the crust.” Their excitement and curiosity remind me why this business is so special, it’s something that brings our whole family together in the sweetest way.
I’m also deeply grateful to my brothers, Justin and Quinton, who have supported me since my culinary school days more than twenty years ago. They’ve always believed in my passion for food and pushed me to pursue it. Having that kind of steady encouragement from family has been one of the greatest blessings in building this business.
