Alright, thank you for sharing your story and insight with our readers. To kick things off, can you tell us how you got started?
What can I say? I LOVE TO COOK! After working in the industry for 8 years, I attended Le Cordon Bleu Culinary Institute, graduating in 2004. My wife and I started a catering company in 2009, but because of the recession, we couldn’t keep it going. Eventually, we moved to Arizona. I started teaching Culinary in Jr. High and High Schools. In the back of my mind, I had always wanted to own a restaurant. Feeling inspired by the movie “Chef,” my desire morphed into a food truck. In the summer of 2021, I started a test kitchen and perfected what I wanted on my food truck, Philly Cheesesteaks. I might not be from Philly, but I have researched it to be as authentic as Arizona can get. In November 2021, my dream came true, and I got my food truck!
I’m sure you wouldn’t say it’s been obstacle free, but so far would you say the journey has been a smooth road?
Getting financing for the truck; finding a company that would loan as much as we needed was hard. We then had a lot of hoops we had to jump through with the Maricopa Health Department to get our mobile food permit. Make our serving window opening smaller. Change out our splash guard next to our handwashing sink and fix out three compartment sink area to accommodate proper washing procedures.
Can you tell our readers more about what you do and what you think sets you apart from others?
We make Philadelphia Cheese Steak sandwiches. All of our sandwiches are the same except for the cheese. We offer the original Philly (OG Philly) with no cheese. Classic Philly comes with either Nacho Cheese (west coast style) or Cheese Whiz (East Coast style). Pro Philly is topped with Provolone Cheese, and then our favorite, the AZ Philly, has jalapenos and topped with Pepper Jack Cheese. What sets us apart from the other Philly places is we use 100% Angus beef steak. Other restaurants use thinly sliced roast beef meat for their Philly’s. I am very proud of my Philly steaks. I am also proud of my Chocolate Chip Cookies. I have received several awards for my cookies. They are underappreciated on my food truck (as they should be). Folks come for the Phillys, not the Cookies.
