Scott, we appreciate you taking the time to share your story with us today. Where does your story begin?
Got started in Naples cooking and burning my first wood-fired pizzas at Pizzeria La Notizia. After burning enough pizzas there I made my way back home to Arizona in hopes to cook for Chris Bianco. Luckily enough he gave me a break and brought me on. I did all I could for him for four years and landed in Tucson thanks to him. After my time with Chris, my wife Shuko and I opened Anello 5 years ago now
We all face challenges, but looking back would you describe it as a relatively smooth road?
Nothing in life is smooth. It is a journey with bumps, potholes, dirt roads, and dead ends. The pandemic was a major upheaval for the restaurant industry and changed how we do business completely. We were dine-in only that had to switch to a take-out model and now we are doing both. It really felt like starting all over again from scratch. Now we are doing both and getting more staff again to meet the demand coming out of this pandemic.
Thanks for sharing that. So, maybe next you can tell us a bit more about your business?
Anello is a wood-fired restaurant that sources local and state food. Straightforward cooking to highlight the produce and meal present. A nose-to-tail approach to every product that comes through the door. In this way, we exemplify what it is and what’s great about it. That said the ingredients must be organic and as local as possible.
Bad or low-quality ingredients lead to mediocre food no matter what. Fermented foods where adds complexity and taste, not for the sake of doing it with no use in mind. Sometimes as is can be just as good if not better than it being manipulated. This is a place to provide people with a healthy and satisfying way to eat. Light snacks and an appetizer with naturally leavened pizza baked in a wood-fired oven.
Can you talk to us a bit about happiness and what makes you happy?
Being with my wife and two boys. Any time spent with loved ones is precious and I am grateful to have them in my life. They keep me going and remind me of all the joys in life.
