Alright, so thank you so much for sharing your story and insight with our readers. To kick things off, can you tell us a bit about how you got started?
Achiote Latin Cuisine began as a backyard passion project by Mike Morales, who started making tacos on a small grill and frying fresh churros in a pot for friends and family. What started as casual gatherings quickly grew into something bigger. By 2018, word of Mike’s flavorful food began to spread throughout the community, thanks to loyal customers and growing attention on social media. The unique blend of authentic Mexican and Venezuelan flavors stood out, and it didn’t take long before people were lining up to see what the buzz was about.

In 2019, Mike took a leap of faith and purchased his first food trailer. On opening day, Achiote made a powerful first impression—the line was long, the food was hot, and the trailer was a hit. The support from the community was overwhelming and encouraging. Achiote became known not just for great food, but for the heart and passion behind it. Every dish was prepared with care, and customers could taste the difference. From tacos and bowls to churros and empanadas, Achiote quickly earned a loyal following.

One of the major milestones for Achiote came in 2023, when the business had the opportunity to serve meals daily at a large construction site at Intel. Achiote was the only Mexican-Venezuelan fusion food trailer on-site—and it stood out. The empanadas sold out every day, and the shredded beef, made with a traditional Venezuelan recipe, became an instant favorite. The fusion concept allowed guests to enjoy the best of both worlds: from Mexican favorites like al pastor tacos to Venezuelan staples like arepas and beef empanadas.

By the summer of 2024, another door opened. Mike was presented with the chance to take over a restaurant space in Chandler, bringing Achiote’s flavors indoors while keeping the same heart and soul it started with. The restaurant allowed Achiote to expand its offerings, serve more guests, and continue its mission of blending two rich culinary traditions into one unforgettable experience. Today, Achiote remains committed to serving bold, authentic flavors and connecting with the community—just as it did from that first backyard cookout.

We all face challenges, but looking back would you describe it as a relatively smooth road?
Summers are slow throughout the valley, and the restaurant is no exception. This allows us to take the food trailer out to an apartment complex and have them experience our food. Once they taste the food they come to the restaurant and experience the rest of the menu.

Achiote is a family-owned Mexican-Venezuelan fusion restaurant that brings together the bold, comforting flavors of two rich culinary traditions. Our menu features a unique variety of handcrafted dishes, including empanadas, arepas, tacos, burritos, quesadillas, and bowls—each one made with fresh ingredients and a whole lot of love. Whether you’re craving slow-cooked Venezuelan shredded beef in a crispy empanada or perfectly marinated al pastor tacos, Achiote offers something special for everyone.

What sets Achiote apart is our commitment to authenticity and freshness. We use high-quality ingredients, and our food is made from scratch daily. The name “Achiote” comes from the traditional Mexican seasoning we use to marinate our al pastor and grilled chicken, giving our dishes their signature flavor. It’s about staying consistent, passionate, and present in every part of the business—from early morning produce runs to late-night cleanups.

We measure success by the loyalty and smiles of our customers, the pride our team feels in their work, and the way our story continues to inspire others. Taking Achiote from a backyard dream to a food trailer and now a full restaurant is already a huge success—but we know the real reward is continuing to serve with purpose and love.
