Today we’d like to introduce you to Lyn Thomas.
Hi Lyn, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
My story began with trying to find “AUTHENTIC ” Louisiana food in the valley. I could never find what I was looking for. So this is how Zydeco’s Louisiana Kitchen began.
We did our research and waited for the right timing. With my family on board and with God’s help we started our journey. It’s truly a pleasure feeding our customers around the valley.
Would you say it’s been a smooth road, and if not what are some of the biggest challenges you’ve faced along the way?
I have learned a lot on this journey. I enjoy what I do; so when the challenges and obstacles came along, I was able to stay focused and storm my way through. Owning and operating a food truck is nonstop cycle. It is not easy work.. You definitely have to have a team to get you through. There is constant prepping, maintenance of temperatures, etc. Some of the struggles are making sure you pricing your food at a marketable and survival price.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I specialize in Cajun and Creole food. Zydeco’s Louisiana Kitchen is known for our Creole seafood gumbo and our famous overstuffed Po’Boys. We create an array of Louisiana dishes to many to name but oh so good.
The one thing that set us apart is we are truly “Authentic “. The dishes that I create are true Louisianan dishes, food that we grew up on. My food is full of flavor and soul.
Cooking for me is like creating art on a blank canvas. It is truly a pleasure to paint (cook) for our customers. I love to please. EVERYTHING is made fresh to order! Nothing sits under a light or a heating lamp. Everything is cooked to order and that’s what makes us special!
Do you have any advice for those looking to network or find a mentor?
Surround yourself with like minded people. Seek advice from people that are on the same journey. What has worked for me is that I have had a mentor from the word “GO”. My cousin Drew Palmer owns and operates a restaurant in Louisiana. He has been my mentor from day one. He gives me advice all the time. I also get a lot of advice from my twin as well.
Make sure your mentor is willing to share their experiences and not trying to sabotage you.
