Meet Ray Hur of Sakana Sushi and Grill

Today we’d like to introduce you to Ray Hur.

So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
Sakana started in 1994 because we saw a need for a reasonably priced, high quality sushi restaurant in the metro Phoenix area. We wanted to make Japanese’s food both approachable and affordable to everyone in the Valley.

Has it been a smooth road?
As with all restaurants there are ups and downs. But our biggest challenge has been building a solid team. We rely heavily on our restaurant managers and as we continue to grow we have to find more and more people to help us Run day to day operations.

So let’s switch gears a bit and go into the Sakana Sushi and Grill story. Tell us more about the business.
We do sushi and Japanese food. We are known for high quality, freshness, reasonable price and generous portions.

How do you think the industry will change over the next decade?
We predict Phoenix will start to look like Los Angeles. More and more specialized restaurants will start to open. For example a restaurant will stop doing a varied menu, and start focusing on one specific dish.
