Today we’d like to introduce you to Paul Fan.
Paul, please share your story with us. How did you get to where you are today?
One night my wife had asked me to make a marinade for some beef. I gathered some stuff that was around my house. We let it marinade for about 12 hours and cooked it off. The beef was so tender and flavorful! I said, man, the marinade is good, but just to thick! My wife said that the marinade looked like salsa. I recreated my sauce and took a chip to try, and it was so different! I gave some to my friends, and they all said it was so different and good! At that point, I knew that a new salsa was born like no other!
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
It has not been a smooth ride at all. When we first opened, we had many people compare us to another company and claimed we copied them. We even explained the differences, but no one wanted to listen. We had many growing pains as well in the beginning. Because it is such a new type of concept, we had to change our kitchen eight times to make our kitchen more sufficient. Training crew members and managers was a hard task as well. Many have never cooked Asian or Mexican food before.
Please tell us about Panda Libre.
We have worked very hard at getting our progress to where it is today. Many people know of us for our fighting Panda. Many people like that we are a family owned business that is set on family orientated events. People know us for our unique burritos and tacos. They love all our Salsas, especially the Double Kick! What sets us apart from the others is that we strive on the friendliest customer service around. Our food is so unique and different that people love a change of pace.
Is there a quality or characteristic that has played an outsized role in your success?
I feel that our choice of food quality has been one of the most important reasons. We use fresh quality produce and proteins. We give people many different options as well as fresh quality food.
