Meet Kyle Hollenbeck and Tom D’ambrosio of Aioli Gourmet Burgers in North Central

Today we’d like to introduce you to Kyle Hollenbeck and Tom D’ambrosio.

Three life-long friends started Aioli Gourmet Burgers and Catering with one thing in mind: to serve quality food to our home-town and become one of the best burger joints in Phoenix. Each member brought different skills to the table, allowing them to turn their life-long dream of owning a restaurant into a reality.

Kyle is a founding member and Director of Operations for Aioli Gourmet Burgers. Growing up with the other two partners in the Shadow Mountain area was a big reason Kyle wanted to have the first Aioli Burgers location near the school. Chef Tommy D’Ambrosio is a graduate from the Culinary Institute of America and has over a decade of a fine dining experience. He was also crowned Chopped Champion on The Food Network in January of 2019 on the episode Tacos & Tequila!

Being born and raised in Arizona, Chef Tommy was happy to come back to his hometown and start, own, and operate one of the fastest-growing food truck experiences in Arizona. Chef Tommy has also lead Aioli brand into the winners’ circle of state & national competitions such as Arizona’s Burger Battle, Phoenix Devoured, and Scottsdale Culinary Classic Events. We started out with one truck six years ago and have since grown it into three brands of a food truck (With eight total trucks) multiple restaurants, Catering company and recently purchased a 14,000 sq foot commissary to help grow and run all the companies.

Has it been a smooth road?
Far from smooth. We have made every mistake you can imagine. There have been times where we have literally towed a food truck to someone’s wedding and the reason is because we never were going to not show up. We have always done what needed to be done to execute any event whether it was 30 people or 3,000.

Learning to manage the money properly and staff. Keeping labor where it needs to be and so many other things we learned along the way.

Aioli Gourmet Burgers – what should we know? What do you guys do best? What sets you apart from the competition?
We specialize in catering. We have the food trucks and can offer drop off and buffet-style catering. Aioli Gourmet Burgers has won so many awards for Best Burger Phoenix New times (2017, 2018, 2019) to the Scottsdale Culinary Festival’s best dish. I am always so proud of our accomplishments and it takes our entire team to get us there.

Chef Tom also won Chopped which was awesome! I am proud of our growth and what we strive to be every day. I think the big things that set up apart from others is our Hustle, Food and Team. We hustle to get every gig and we work hard for our customers. Our sales team works hard to make sure all of your needs are met whether it’s for your kid’s 1st Birthday or your Wedding.

As for the food Chef Tom always pushes his team to a culinary extreme on our Burgers of the now at the restaurant (a featured Burger our team makes on a regular basis) and the Catering we offer for any event.

How do you think the industry will change over the next decade?
We are always looking ahead. You see new ideas such as Ghost kitchens, Food delivery such as Uber Eats and online ordering for catering could change our business and already has. Technology is being implemented every day into our business and that is exciting. Minimum wage has affected us and will continue to affect the way we need to charge for our services. We have always paid above that but with it continuing to grow it makes it interesting when trying to bring people on board.
