Meet Jimmy Li of Pokitrition in Chandler

Today we’d like to introduce you to Jimmy Li.

Thanks for sharing your story with us Jimmy. So, let’s start at the beginning and we can move on from there.
Having been in the food industry most of my life working in family restaurants and my experience as a sushi chef during my college years it was a perfect mixture of luck, experience and support from the local community.

My position out of college, I traveled quite a bit for my projects and would often end up in Hawaii 3-4x a year, and loved it so much I would vacation there as well. I stumbled upon Poke on my first visit there, just because there are so many shops dedicated to poké and even grocery stores offered a multitude of options in their deli cases. The idea of raw fish was nothing new to me, and at the time, Chipotle was expanding so rapidly, that when you put two and two together, one would think this would be a match made in heaven!

Each time I traveled to Hawaii, the more it grew from a spark to an actual concept. The more times I thought about it, the more times I convinced myself that this could definitely be something we could accomplish. As I began my research, California was just starting to expand on their poké game and knew that it was going to be now or never for this idea. I got together with a close group of friends and the rest is history!

We’re always bombarded by how great it is to pursue your passion, etc – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
As I’m sure any business owner can tell you, owning a business is not an easy task. You go from focusing on the projects received, to worrying about every single thing surrounding your business.

While struggles are inevitable, I am fortunate enough to have a team that is not afraid and who are willing to tackle our biggest challenges.

Pokitrition – Sushi Burritos & Poke is a counter serve restaurant serving customizable poke bowls and burritos consisting of raw fish, cubed into pieces, with toppings such as mango, masago, and avocado. We source our tuna directly from Hawaii, where they catch and ship to our store via next day air.

The specialty at Pokitrition is our Marinated Tuna, which is our most authentic Hawaiian selection. It is raw ahi tuna, flown in from Hawaii, marinated in our delectable sesame shoyu sauce with ogo nori and inamona.

With fresh Ogo Nori, we have the taste of Hawaiian seaweed that snaps under your teeth and tastes like the ocean.

With Inamona, we have roasted and ground kukui nuts that have been used in generations in Hawaiian Poke. This really brings out the flavor in our Marinated Tuna.

At Pokitrition, we are also the first original Sushi Burrito in Arizona. Each guest that walks in through our doors is awed by the sheer size of it and intimidates our competition.

What were you like growing up?
I was born in New York City and grew up in California before settling into Arizona to attend ASU. I had the opportunity to live in two of the biggest metropolitan areas in the US and it definitely helped shaped who I am today.

Growing up, I would regard myself as a thinker and I would always assess situations before I reacted. As I grew older, I realized that there are a million ways that one can address the situation and sometimes it’s best to just go with your instinct.
