Today we’d like to introduce you to Domenico Cavallo.
Domenico, let’s start with your story. We’d love to hear how you got started and how the journey has been so far.
After ten years in Phoenix, I moved to Laveen and I start my farm. around no Italian restaurant so one night I decide to open an authentic pizzeria Napoletana and south Italy restaurant style. The name MiMi is my father’s name. I imported the oven from Napoli, also most of the products coming from Italy. But I decide to do something different, something to using my farm. Four years ago, I started my farm Cavallo Vineyards. The farm consists in 300 olive tree and 700 grapes Vines, 60-70 fruits trees and a garden where I produce vegetables for the restaurant. We usually using the products from the farm in the weekend for the specials. Also, I have 100 chickens where we using the eggs for the desserts and the weekend brunch.
Overall, has it been relatively smooth? If not, what were some of the struggles along the way?
The farm is fun, challenge with the weather, the food is excellent, some people are expecting to find Olive Garden but I try to not to be rude. I want to stay authentic, fresh food daily. Daily made pasta, Pane/Bread, vegetables, pizza with 70-75% hydration, nice wine list.
Please tell us about MiMi Forno Italiano.
I don’t want compete with others restaurants, I only want cook the best way I can with the best products I can find. I’m the one select all the products and the wines we sale at MiMi. I decide the specials to make every weekend with the chefs working in the kitchen and I will decide any changes. I update the menú every 4-5 months. I’m proud of my people and my plates. Different from others is the farm
