Today we’d like to introduce you to Celine Feezell.
So, before we jump into specific questions about the business, why don’t you give us some details about you and your story.
When I found out I was pregnant, the mother gene kicked in right away. I never was into cooking but all of a sudden, I felt the need to feed my family. I started watching the Food Network, cooking every meal and it felt like I was home. I decided to make the big move from Tucson to Phoenix as a single mom to attend Le Cordon Bleu. I graduated in 2011 and was placed in a bake shop for my externship. I had the most incredible pastry chef (Hi Ben!) and fell in love with the sweet side of food. My family is from Nice, France and I knew that I had a long line of chefs in the family. But the more I progressed in the industry, the more I found out. Not only was my grandfather a chef, but he also graduated from Le Cordon Bleu. In 2016, after working all over the valley in pastry, I decided I wanted to leave some of my family love behind and decided to start Beignet Babe. Most people did not even know what beignets were when I started, but I stuck with it and three years later, I have an amazing group of followers and customers! Everything I make is made with so much love and pride not only from me but from the past chefs in our family that I feel with me all the time!
We’re always bombarded by how great it is to pursue your passion, etc. – but we’ve spoken with enough people to know that it’s not always easy. Overall, would you say things have been easy for you?
Being a single mom, the decision to leave a big corporate job with health benefits was a major decision for me. Ultimately I knew that Beignet Babe had my heart and I had to pursue it. I started with no money and hoped every farmer’s market I would just leave with a little more than I came with. Most people had no idea what I was selling. I had to do a lot of educating, sampling and crying. I have found myself at the bottom thinking if this was really worth the risk after failing at multiple events that I threw a lot of money into. But persistence is key!
So let’s switch gears a bit and go into the Beignet Babe story. Tell us more about the business.
At Beignet Babe, we make artisanal French Beignets and French Crullers. We take the traditional beignet and give it a twist with different fillings we offer from lemon to chocolate. Our French Crullers are made fresh daily with an authentic Pate A Choux and dipped in different flavor glazes. Everything is made by hand from the dough to all the fillings and glazes we offer. We are most proud to bring real deal French donuts to the valley of the sun. We have grown so much as a brand and have grown a family of customers. I’m so proud to call most of our customers friends. We not only pride ourselves in our donuts but also in being 100 percent authentic with all our customers.
Is there something we can do as a city to improve the outlook for businesses like yours?
Phoenix is an amazing city! The opportunities here are endless. That being said, when the summertime comes for us outdoor vendors, it can be a little hard. But it’s not impossible. Never give up on your dreams!
