Community Highlights: Meet Brittany Salazar of New Penny Cafe

Today we’d like to introduce you to Brittany Salazar.

Hi Brittany, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start, maybe you can share some of your backstories with our readers?
It’s always hard to talk about yourself and know where to start when people ask for my story. I am an Arizona native and went to Northern Arizona University. At first, I wanted to be a teacher because I grew up with my parents as teachers but once I got to college, I decided to try something new and switched my degree to Hotel and Restaurant Manager with a business minor. As soon as I took my first core classes, I fell in love! So during my summers, to gain more experience in the industry, I got a job at Paradise Bakery. This was my first job in the industry and made me feel like I had found what I would do with my life. I got to talk to people, learn about them and make them happy with the food. Who could ask for more? Once I graduated from college, I got offered a position with Paradise Bakery as a manager. I worked with them for about 6years before I decided to spread my wings. I went to work for NYPD Pizza, which was different from Paradise. I learned how to make pizza and manage a more casual dining experience with a waitstaff, delivery drivers, and take-out. I learned a lot from working with them, but again it was time to spread my wings. So I went to work at another similar counter service restaurant, where I met my business partner. We worked together and realized we have many strengths that complement each other. So after about a year of talking about going into business together, we made the leap of faith. We now own Enroute Coffee and Tea house in Goodyear. While owning Enroute, we met an amazing friend in the owner of Saddle Mountain Brewing Company, Laura. Together the three of us are opening New Penny Cafe.

Would you say it’s been a smooth road, and if not, what are some of the biggest challenges you’ve faced along the way?
In terms of opening the new concept, it has been a challenge. Some of that stems from Deni, and I were new to building something from the ground up. Some of the other struggles have been different industries having hiring issues. We had trouble finding an engineer; we went to a couple of different ones before finding one that could fit our project. Most of them were too busy to take on another client. Then we ran into the same issues with the City, everyone was just short-staffed, but the volume of projects was rising. We had planned to be open in February, but with all the delays we encountered, we had to push it to August. We leaned on Laura for her knowledge, which was a great learning experience for Deni and me.

Thanks – so what else should our readers know about New Penny Cafe?
We are a new concept opening in the West Valley. We are a fast-casual brunch spot. We will offer an array of sweet and savory breakfast stables. We will have a full coffee bar, select beers, wine, and some signature cocktails. We will also bake special treats in-house, such as cookies, loaves, and cinnamon rolls. We hope to be a welcoming, inviting environment that serves the community and a gathering spot for brunch, coffee, and cocktails.

Is there a quality that you most attribute to your success?
Since this isn’t a one-woman show, we rely on each other’s strengths. We know what we do well and stay in our lines to make us function as one. No one is fighting for control, and we appreciate what we individually bring to the table. We all pull from different experiences in the industry, and with such differences, we are better able to take off the horse blinders. We can think outside the box and pivot as the industry changes. We have such passion for what we do and many different concepts we would like to see come to light, which helps keep our passion alive.
